Weekly Menu Plan

This week will be yet another atypical week in terms of our schedule.  Hopefully having a menu plan in place will mean healthy, home-cooked meals on the table every night – even those nights when we have to squeeze them into a mere few free minutes – and minimal eating out and/or last minute, unhealthy food choices.

Monday night.  My husband makes a delicious deep dish ground beef and mushroom pizza.  I’m taking the night off and letting him do his thing.  We’ll pair the pizza with a simple salad.

Tuesday night.  I’m doing some training at my former workplace on Tuesday and Wednesday, so dinner needs to be quick and easy those nights.  My plan is to have Jim brown a double batch of ground beef when he’s making pizza Monday night, then dump half of it into the slow cooker Tuesday morning for chili.

Wednesday night.  This is shaping up to be the week for old stand-by recipes.  Tonight we’ll have ground beef burritos – always a favorite with all of the kids.

Thursday night.  Book club, so I’ll be dining out – and discussing The Silver Star by Jeannette Walls.  Can’t wait!

Friday night.  The younger kids will be with their dad, which means I’ll be working away all afternoon and evening.  I plan to put White Chicken Chili Mac in the slow cooker early in the day so we have a nice warm dinner ready for whenever we have a chance to eat it.

Saturday night.  Date night!

New recipes to try if we have time.  Healthy Eggnog Pudding | Orange and Vanilla Overnight Oats | Roasted Cauliflower Soup (for lunches.)

Winners from last week.  Mama’s Refried Bean Soup | Roadhouse Pizza | Slow Cooker Chicken in Peanut Sauce

All of these were new-to-us recipes, and all were absolutely delicious.  Definite repeaters.

  3. I’m just about to dig into “The Silver Star.” I’ve probably told you that three times already, and I apologize for that. I’m just excited for a new book!
    Leftover nachos here for tomorrow, and probably a Trader Joe’s pizza at one point this week – when I really, really need an easy night.

    • We do frozen pizzas every now and then, too, and I really love them … even though I feel like I shouldn’t … I’ve never tried a Trader Joe’s pizza but I bet they’re good. Unfortunately we’re a long ways away from a TJ.

  5. Old standay recipes are a life-saver sometimes! I love to try new recipes, but it takes a lot more work to constantly be making new dishes. I’m always pleasantly surprised how easy it is to make something that I’ve made time and time again.

    • How exciting! I absolutely adore my slow cooker. I’ve only started using it regularly within the past six months or so, but it’s become a weekly (at minimum) thing. Have fun with it, and let me know if you come across any recipes I need to know about. I’m always looking to expand my collection.

  7. What a good looking menu! I have been guilty of not planning ahead the past few weeks and our meals have definitely suffered as a result. I am anxious to get back to planning!
